Light enough to handle all day, sharp enough to do the work properly. The blade is carbon steel, hand-sharpened by Bruce before it ships. The handle is shaped from reclaimed New Zealand timber — every one different, every one warm in the hand. Built to be used every day and passed on.

About carbon steel

Carbon steel takes a sharper edge than stainless and responds well to a sharpening stone, so you can keep it sharp at home. It's been the material of choice for handmade blades for generations.

It also picks up a patina with use. Each cut, each clean, each oil — it all becomes part of the knife. After a few months yours will look slightly different to anyone else's, and slightly different again in a year. That's the knife getting to know you and your kitchen.

Custom leather sheath (+$120)

Hand-stitched to fit your exact knife, in leather that ages with the blade. A premium finish — handy for storage or for taking the knife to a picnic, a hunting cabin, or a friend's place to cook. Allow ~2 extra days.

Custom Kydex sheath (+$65)

Moulded plastic, custom-fit to your knife, water-resistant and easy to rinse clean. A simple way to protect the edge if the knife isn't living in a block. Allow ~2 extra days.

  • NZ shipping: $9.50, tracked, from Clevedon. About 2-3 working days once dispatched.

  • Returns: Not right for your hand? Send it back, we'll find you another. Return shipping at your cost; the swap itself is free.

  • Warranty: Lifetime support. Anything goes wrong that's our fault, we'll fix it free. Damage from accident or wear, we'll repair it for a small fee.
