Honesuki - Boning Knife
This handmade Honesuki is a Japanse style boning knife and is perfect for finer boning jobs such as poultry. The agile tip gives precision when navigating smaller bones and reaching into difficult places, think precision and razor sharpness over brute force with this knife. The Honesuki also works brilliantly as a general purpose meat knife or for finer vegetable tasks such as dismantling a broccoli. Being made from quality German high carbon steel, it is easy to give this knife a tickle on a sharpening steel and keep its razor sharp edge throughout any job.
The handle material is purple heart. A tropical hardwood from Central and south America. Purple heart is a tough wood with medium grain, it polishes up really well for knife handles.
All of our knives are based off our knife course designs and have been refined over many iterations to achieve the perfect balance of form and functionality.
Hand made by Bruce Stuart in Clevedon, Auckland.

Care instructions
Please note, your knife is made from carbon steel and as a result will tarnish with use. This discolouration is called a patina and acts as a protective layer. This layer will build up with time and use and is part of what gives your knife its character.
Do not leave your knife wet as this will cause it to rust, always wipe it with a damp cloth and put it away. Never put your knife through a dishwasher, as the extreme heat causes the glue bond to break and the materials to expand at different rates, allowing water to get in between your handle and the blade. This will cause rusting and will ultimately destroy your knife.
Be careful to wipe the blade clean when using it with acidic fruits/vegetables (lemons, tomatoes etc).
Warranty
We stand behind the quality of our knives and are proud to offer a lifetime warranty (excludes misuse and normal wear) from manufacturing defects. If you have a problem with your knife, please get in touch with us.
*Please note knife may differ slightly from the image as each item is handmade and no two will ever be identical. Expect to see variations in colour/ grain on the timber handles.
