Paring Knife
This handmade paring knife is perfect for all of those more fiddly and precise kitchen tasks. The paring knife is a staple in any chefs arsenal and provides a superior level of control over the blade and tip due to its smaller nature. Being made from quality German high carbon steel, it is easy to give this knife a tickle on a sharpening steel and keep its razor sharp edge throughout any job.
The handle material options here are either purple heart or NZ Kauri. Kauri has been a popular timber for boatbuilding and furniture in NZ. It is no longer being harvested but all our handle woods are recycled timbers.
All of our knives are based off our knife course designs and have been refined over many iterations to achieve the perfect balance of form and functionality.

Care instructions
Please note, your knife is made from carbon steel and as a result will tarnish with use. This discolouration is called a patina and acts as a protective layer. This layer will build up with time and use and is part of what gives your knife its character.
Do not leave your knife wet as this will cause it to rust, always wipe it with a damp cloth and put it away. Never put your knife through a dishwasher, as the extreme heat causes the glue bond to break and the materials to expand at different rates, allowing water to get in between your handle and the blade. This will cause rusting and will ultimately destroy your knife.
Be careful to wipe the blade clean when using it with acidic fruits/vegetables (lemons, tomatoes etc).
